HEALTHY ARTISAN ICE OF MACERATED RED FRUITS IN ECOLOGICAL BALSAMIC VINEGAR L’OLI FERRER

In this recipe we explain how to make a healthy ice cream artisan of red fruits macerated in vinegar for the whole family. By macerating the fruits the acid of the vinegar causes the fruits to multiply all their expression and aroma, neutralizing the acidity of the vinegar.

To make the ice cream we will need a powered blender or a cooking robot.

Steps to follow:

1- We choose red fruits, strawberries, blueberries, ripe blackberries, but without being soft, wash them, cut and place in a bowl with a teaspoon of organic balsamic vinegar from Pedro Ximénez L’Oli Ferrer and a tablespoon of panela, we cover it with a plastic film and it we let macerate in the fridge for a few hours.When macerated, we freeze the fruit.

2- We put the frozen fruit and the Greek yogurt in the blender. You can put skimmed yogurt or soy instead, but the Greek will give us a creamier texture.

3-You can add honey, agave syrup or panela depending on how healthy do you want it to be.

4- We crush it and there will be a creamy ice cream texture. It can be consumed once crushed or left in the freezer for about 2 hours to make it more consistent.
