Essence by L’Oli Ferrer, is an organic extra virgin olive oil, a Premium product of exceptional quality produced with double amount of olives from the best selection of organic arbequina olives collected of “early harvest” at the begining of October to extract the essence of liquid gold of the health. The intense and expressive olive oil and surprisingly fresh, takes us to the origins of our Mediterranean terroir, an intensive and persistent taste with strong character, balanced and complex.
It has intense green colour with touches of gold as a result of the extraction of double olives. It has a persistent taste and great aromatic quality, that leaves a fruity bouquet in the nose and mouth.
The intense aroma of green olive oil reminiscences of tomato, almond, avocado and spices such as coriander, leaving a pleasant taste in the mouth that is slightly chilly, a great balance between sweet and bitter.
It is used both for the preparation of different dishes and also to accompany ready dishes, in modern and traditional cuisine alike. It is a perfect ingredient to balance and texture of dishes such as fish, pasta, vegetables, salads, carpaccio, cheese, cold soups, bread, rice, and dessert.

Pedro Ximénez balsamic vinegar caviar
The L’OLI FERRER balsamic vinegar caviar from Pedro Ximenez is a new way of presenting the vinegar, a delicatessen product to use for the finest and avant-garde cuisine.It is an innovative and original product. The balsamic vinegar caviar from PX is made with the sferification technique obtaining a sphere similar to caviar texture.
They are pearls of balsamic vinegar that explode in the mouth allowing us to enjoy the taste before merging with the other ingredients of the dish.
It can be used with any dish that would come with crude olive oil specially for haute cuisine like Ferran Adrià’s.
The balsamic vinegar caviar is made from Pedro Ximenez grapes that are dried naturally in the sun and have the aroma such as raisins, honey, and notes from aged in American oak. The caviar explosion in the mouth brings freshness, acidity and sweetness.
Cold soups, foie gras, salads, ice cream, pancakes, desserts with red fruits and for dish decoration. We do not recommend using it for hot cooking because it would break the texture that covers it. Refrigeration is recommended after opening.
Mediterranean Salt Flower
LOLI FERRER Mediterranean salt flower is the pure form of salt, collected manually from the upper layers following the traditional techniques in the Delta del Ebro. After the manual collection it is dried in the sun. It is 100% natural without any treatment or additives.
White with pink and greyish hughlights, subtle notes of violets and delicate marine smell.
It is used to enhance the taste of food itself, to finish a dish, both meat, fish or vegetables, and desserts like chocolate.
