Per tot aix\u00f2, ens permetem el poder gaudir d&#8217;una recepta carregada de xocolata, que en una altra setmana de l&#8217;any no ens permetr\u00edem menjar, per\u00f2 en aquesta setmana que tot val, perqu\u00e8 no??<\/p>\n<p>Tenim un ampli ventall de receptes de pastissos de xocolata, per\u00f2 aquesta segur que enamorar\u00e0 a qualsevol persona que ho provi, i a m\u00e9s est\u00e0 elaborada amb ingredients saludables i la majoria d&#8217;ells ecol\u00f2gics, com el nostre<span style=\"font-size: 14.4px;\">\u00a0<\/span><strong style=\"font-size: 14.4px;\"><a href=\"https:\/\/www.loliferrer.com\/ca\/producte\/packs-regal-gourmet\/vinagre-organic-de-pedro-ximenez\/\">Vinagre org\u00e0nic de Pedro Xim\u00e8ne<\/a>z<\/strong><span style=\"font-size: 14.4px;\">, la <\/span><a style=\"font-size: 14.4px;\" href=\"https:\/\/www.loliferrer.com\/ca\/categoria-producte\/flor-sal\/\"><strong>Flor de sal del Mediterrani<\/strong><\/a><span style=\"font-size: 14.4px;\"> i l&#8217;<a href=\"https:\/\/www.loliferrer.com\/ca\/producte\/packs-regal-gourmet\/elegance-barcelona-by-loli-ferrer\/\">O<strong>li <\/strong><\/a><\/span><strong>d&#8217;Oliva Verge Extra Elegance Barcelona by L&#8217;Oli Ferre<\/strong><strong style=\"font-size: 14.4px;\">r.<\/strong><\/p>\n<h4>Recepta de past\u00eds de xocolata perfecta<\/h4>\n<p>Aquesta recepta de past\u00eds de xocolata \u00e9s molt esponjosa i recomano elaborar-la 2 dies abans de la data assenyalada, el primer dia fer el bescuit, una vegada estigui fred cobrir-lo amb paper film i posar-ho a reposar en la nevera, el segon dia tallar-lo, sempre \u00e9s m\u00e9s f\u00e0cil tallar-lo en fred amb una lira de pastisseria, i \u00a0emplenar-ho , aix\u00ed el past\u00eds s&#8217;humitejar\u00e0 i agafar\u00e0 m\u00e9s el gust als ingredients, per al tercer dia gaudir-lo. Aix\u00ed no hem d&#8217;anar amb presses i \u00e9s per tot aix\u00f2 que aconseguirem un resultat espectacular.<\/p>\n<p>El past\u00eds t\u00e9 un toc amarg del cacau pur i de la cobertura de 72% de xocolata, per\u00f2 la mousse ho suavitza bastant, si voleu fer-ho menys amarg, podeu reduir la quantitat de Cacau, afegir una mica m\u00e9s de sucre o en la cobertura de ganache que la xocolata sigui del 52%.<\/p>\n<p>&nbsp;<\/p>\n<figure id=\"attachment_4831\" aria-describedby=\"caption-attachment-4831\" style=\"width: 800px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-4831 size-medium\" src=\"https:\/\/www.loliferrer.com\/wp-content\/uploads\/Pastel_de_chocolate-800x600.jpeg\" alt=\"Past\u00eds de xocolata\" width=\"800\" height=\"600\" srcset=\"https:\/\/www.loliferrer.com\/wp-content\/uploads\/Pastel_de_chocolate-800x600.jpeg 800w, https:\/\/www.loliferrer.com\/wp-content\/uploads\/Pastel_de_chocolate-1050x788.jpeg 1050w, https:\/\/www.loliferrer.com\/wp-content\/uploads\/Pastel_de_chocolate-768x576.jpeg 768w, https:\/\/www.loliferrer.com\/wp-content\/uploads\/Pastel_de_chocolate-1536x1152.jpeg 1536w, https:\/\/www.loliferrer.com\/wp-content\/uploads\/Pastel_de_chocolate-2048x1536.jpeg 2048w, https:\/\/www.loliferrer.com\/wp-content\/uploads\/Pastel_de_chocolate-510x383.jpeg 510w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><figcaption id=\"caption-attachment-4831\" class=\"wp-caption-text\">Past\u00eds de xocolata per a enamorar<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<h3><strong>Ingredients del bescuit<\/strong><\/h3>\n<p>&nbsp;<\/p>\n<p>100 ml <span style=\"font-size: 14.4px;\"><a href=\"https:\/\/www.loliferrer.com\/ca\/producte\/packs-regal-gourmet\/elegance-barcelona-by-loli-ferrer\/\">O<strong>li <\/strong><\/a><\/span><strong>d&#8217;Oliva Verge Extra Elegance Barcelona by L&#8217;Oli Ferre<\/strong><strong style=\"font-size: 14.4px;\">r<\/strong><\/p>\n<p>300 gr. de sucre moreno o panela<\/p>\n<p>270 gr de farina d&#8217;esperlta o integral (tamisada)<\/p>\n<p>270 ml de Buttermilk (20 ml de suc de llimona + 250 de llet sencera)<\/p>\n<p>100 gr. de Cacau pur en pols<\/p>\n<p>180 ml d&#8217;aigua calenta<\/p>\n<p>3 Ous L<\/p>\n<p>1 Cullaradeta de bicarbonat s\u00f2dic<\/p>\n<p>2 Cullaradetes d&#8217;extracte de vainilla<\/p>\n<p>1 Sobre de llevat<\/p>\n<p>1 Polsim de<strong> Flor de Sal del Mediterrani L\u2019Oli Ferrer <\/strong><\/p>\n<p>2 bosses de t\u00e9 chai<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Ingredients\u00a0del farciment\u00a0Mousse\u00a0de xocolata i\u00a0coulis\u00a0de fruits vermells<\/strong><\/h3>\n<h3><strong>Coulis de fruits vermells<\/strong><\/h3>\n<p>Fruites vermelles (nabius, mores, gerds i maduixes), tamb\u00e9 teniu l&#8217;opci\u00f3 de comprar una bossa congelada de variat de fruites del bosc.<\/p>\n<p>1\/2 cullaradeta de <strong>vinagre org\u00e0nic bals\u00e0mic de Pedro Xim\u00e8nez L\u2019Oli Ferrer<\/strong> per a macerar els fruits vermells.<\/p>\n<p>3 cullaradetes de sucre<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Mousse de chocolate <\/strong><\/h4>\n<p>200 de xocolata negra<\/p>\n<p>100 de sucre<\/p>\n<p>300 de nata 35% de mat\u00e8ria grassa<\/p>\n<p>2 clares d&#8217;ou talla L<\/p>\n<p>3 fulles de gelatina<\/p>\n<p>50 ml de crema de licor o ron<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Ingredients de la cobertura <\/strong><\/h4>\n<p>Frosting- Ganache de xocolata<\/p>\n<p>200 ml de nata (35 gr.de mat\u00e8ria grassa m\u00ednim)<\/p>\n<p>200 gr. de xocolata negra 72%<\/p>\n<p>40 gr. de mantega (opcional)<\/p>\n<p>1 polsim de vainilla<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Preparaci\u00f3 past\u00eds de xocolata per a enamorar<\/strong><strong>\u00a0<\/strong><\/h3>\n<p><strong>Per al biscuit<\/strong><\/p>\n<p>En primer lloc preescalfem el forn a 180\u00b0 a dalt i a baix i passem mantega en un motlle de 20 cm o en 2 motlles baixos de 20 cm, tamb\u00e9 recomanem posar paper d&#8217;enfornar perqu\u00e8 es pot desmotllar amb facilitat.<\/p>\n<p>Posem a bullir l&#8217;aigua i infusionar el Te chai. El seg\u00fcent pas ser\u00e0 preparar la buttermilk, a la llet afegim suc de llimona fins que es facin grumolls en la llet.<\/p>\n<p>Preparem els ingredients secs, tamisem la farina tamisada i la barregem amb el llevat, la <a href=\"https:\/\/www.loliferrer.com\/ca\/categoria-producte\/flor-sal\/\">Flor de Sal del Mediterrani L\u2019Oli Ferrer<\/a>, el bicarbonat i el cacau i el reservem.<\/p>\n<p>En la batedora o en un got per a batre, posem a batre els ous fins que dobleguin el volum, posteriorment afegim el sucre, quan estigui ben barrejat afegim l&#8217;Oli<\/p>\n<p><a href=\"https:\/\/www.loliferrer.com\/ca\/producte\/packs-regal-gourmet\/elegance-barcelona-by-loli-ferrer\/\">d&#8217;Oliva verge extra Elegance by L\u2019Oli Ferrer<\/a>, l&#8217;extracte de vainilla i continuem batent. Despr\u00e9s afegim la buttermilk i els ingredients secs intercalant una mica de buttermilk i una mica d&#8217;ingredients secs, quan estigui tot ben barrejat posem la infusi\u00f3 de te chai a temperatura ambient.<\/p>\n<p>Finalment ho posem en el motlle pr\u00e8viament greixat amb mantega o oli d&#8217;oliva (normalment sempre poso oli d&#8217;oliva verge extra), si el motlle \u00e9s alt estar\u00e0 en el forn aproximadament 60-65 minuts, Si hem dividit la massa en 2 motlles molt baixos, el temps ser\u00e0 de 40 minuts aproximadament. Punxar en el centre i quan el palet surti net \u00e9s que ja est\u00e0 fet el vostre past\u00eds, sempre punxar en el mig. Tamb\u00e9 \u00e9s indicatiu que no est\u00e0 fet totalment quan t\u00e9 bombolles en la part central.<\/p>\n<p>El past\u00eds el deixem refredar sobre una reixeta i nom\u00e9s el tallem quan estigui fred, si ho talleu en calent es desmuntar\u00e0.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Preparaci\u00f3 del farcit del past\u00eds de xocolata<\/strong><\/h3>\n<h4><strong>Coulis de fruits vermells<\/strong><\/h4>\n<p>Primerament posem a macerar les fruites vermelles amb una mitjana cullaradeta de <a href=\"https:\/\/www.loliferrer.com\/ca\/producte\/packs-regal-gourmet\/vinagre-organic-de-pedro-ximenez\/\"><strong>Vinagre Org\u00e0nic bals\u00e0mic de Pedro Xim\u00e8nez<\/strong> <\/a>L\u2019Oli Ferrer i amb tres cullerades de sucre i reservem perqu\u00e8 vagi macerant-se, crear\u00e0 un l\u00edquid que ser\u00e0 perfecte per a xopar el bescuit amb l&#8217;ess\u00e8ncia dels fruits vermells.<\/p>\n<p>Ho posem a escalfar fins que es faci una melmelada natural i reservem per a emplenar quan estigui fred.<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Mousse de xocolata<\/strong><\/h4>\n<p>Primer fonem la xocolata en el microones o al bany maria, el deixem que reposi, per\u00f2 sense que arribi a posar-se dur.<\/p>\n<p>Hidratem la gelatina en aigua freda uns 10 minuts. Mentrestant muntem les clares d&#8217;ou amb la meitat de sucre. Posteriorment barregem amb moviments envolupants i amb molta cura la xocolata fosa amb la merenga.<\/p>\n<p>Escalfem una mica el licor i afegim les fulles de gelatina pr\u00e8viament escorregudes i les dissolem en el licor, l&#8217;incorporem a la mescla de les clares i la xocolata immediatament si no tornen a fer-se s\u00f2lides les fulles de gelatina.<\/p>\n<p>Per \u00faltim semi muntem la nata amb la resta del sucre, \u00e9s per aix\u00f2 que no deixem que es munti totalment, si no tallaria la textura del mousse i amb unes varetes l&#8217;anem barrejant amb molta cura. Ho deixeu reposar en la nevera o en el congelador perqu\u00e8 agafi m\u00e9s textura-<\/p>\n<h4><strong>Ganache per a la cobertura del past\u00eds de xocolata<\/strong><\/h4>\n<p>Trossegem la xocolata i el reservem.<\/p>\n<p>Posem a escalfar la nata, i abans que arribi a bullir la retirem del foc.<\/p>\n<p>Per \u00faltim afegim la xocolata sobre la nata i s&#8217;anir\u00e0 desfent, removem amb unes varetes.<\/p>\n<p>Seguidamenent incorporem la mantega (opcional) i perqu\u00e8 quedi brillant hem de continuar batent fins que es temperi.<\/p>\n<h3><strong>Farcit del past\u00eds i cobertura<\/strong><\/h3>\n<p><span style=\"font-size: 14.4px;\">Emplenem les diferents capes del past\u00eds amb la melmelada de fruits vermells artesana, el deixem reposar i quan les diferents capes del bescuit estiguin xopades, incorporem en cada capa el\u00a0mousse\u00a0de xocolata.<\/span><\/p>\n<p>Muntem el past\u00eds i col\u00b7loquem sobre una reixeta i ens disposem a tirar la\u00a0garnache\u00a0de xocolata.<\/p>\n<p>Per a acabar de decorar he posat una mica de colorant aliment\u00f3s en forma de pols per a donar-li un toc de fantasia, un h\u00edbrid entre el Dia dels enamorats o Sant Valent\u00ed i Carnestoltes, per\u00f2 com veieu totes les decoracions utilitzades s\u00f3n totalment org\u00e0niques, intentant utilitzar el que ens d\u00f3na la naturalesa i aplicar-ho.<\/p>\n<p>Tots els productes els podeu trobar a la nostra botiga en l\u00ednia <a href=\"https:\/\/www.loliferrer.com\/ca\/\">www.loliferrer.com<\/a> i si voleu comprar-ho en botiga f\u00edsica, podeu trobar-los en el <a style=\"font-size: 14.4px;\" href=\"https:\/\/www.elcorteingles.es\/club-del-gourmet\/A19664976-aceite-de-oliva-virgen-extra-ecologico-100-arbequinas-elegance-loli-ferrer\/\">Club del Gourmet del Corte Ingl\u00e9s.<\/a><\/p>\n<p>&nbsp;<\/p>\n<h3>Origen de la Ganache de Xocolata<\/h3>\n<p>Diuen que l&#8217;origen de la Ganache de xocolata est\u00e0 a Fran\u00e7a, i que va ser el descuit d&#8217;un pastisser que per error va tirar nata calenta a la xocolata, i el seu mestre pastisser li va cridar Ganache que vol dir en franc\u00e8s incompetent. Van utilitzar la crema i va ser un \u00e8xit que va conservar el nom de Ganache.<\/p>\n<p>La Ganache de xocolata \u00e9s una mescla de nata (cr\u00e8me fra\u00eeche) barrejada en calenta amb xocolata a trossos.
